The team behind Honky Tonks open Twist in Central
The team behind Honky Tonks and Terracotta Lamma has brought Twist to Central, a pasta bar that feels perfectly at home in trendy Sheung Wan. Chef Ben Sears builds on classical Italian technique, but it’s the local touches that make the menu sing: Bone Marrow Macaroni riffs on Kau Kee’s curry brisket noodles, while Squid Ink Spaghetti arrives with prawn, orange, zucchini, and a dusting of dried shrimp roe—a subtle nod to familiar flavours. Every pasta is made in-house, from silky Northern egg pasta to hearty whole wheat bigoli, ensuring impeccable texture and freshness. Inventive small plates—like Cacio e Pepe Crochette and a Tramezzino Pig Ear Sando—add playful indulgence. Drinks are equally considered: the Caprese Martini marries Parmesan, tomato, and basil oil in a single, striking sip, while the curated wine list spans Italy, Spain, France, and beyond.
